Chick-a-bell Rolls (Chicken and Ham Spirals)

Jazz up your Christmas feast with this delicious marriage of crunchy chicken and sweet holiday ham!

Ingredients

4 large whole chicken breast fillets, sliced to make 2 fillets
8 thin deli slices Christmas ham
1/4 cup butter, softened
Freshly ground black pepper
1 1/2 cups all-purpose flour
3-4 medium eggs, beaten well
2 1/2 cups Panko (Japanese breadcrumbs)
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
Cooking oil, for frying

Sweet Mustard Dip

1 cup mayonnaise
4 tbsps yellow mustard
3-4 tbsps Alaska Sweetened Condensed Filled Milk (or to taste)

Creamy Gravy

1 pack Del Monte Gravy Mix
1 1/2 cups Alaska Evaporated Filled Milk

Procedure

To make Sweet Mustard Dip: In a small bowl, whisk 1 cup mayonnaise, 4 tbsp yellow mustard, and 3-4 tablespoons Alaska Sweetened Condensed Filled Milk.
Chill until it is ready to use.
To make Creamy Gravy: In a sauce pan, combine 1 packet of gravy mix and 1 ½ cups of Alaska Evaporated Filled Milk.
Whisk until completely dissolved.
To make Chicken and Ham spirals: prepare 4 large whole chicken breast and slice each in half.
Slice into each of the breast fillets and butterfly them into a uniformly-thick slice.
Pound the fillets into 1/2 cm thick pieces, rounding out the shape of the chicken.
Spread some softened butter on each fillet.
Sprinkle with ground black pepper.
Place a thin slice of Christmas ham on each piece of chicken.
Start rolling each piece from one side to the other, securing ends with a toothpick or two.
Repeat step 7 until you have rolled all 8 pieces.
For the breading station: Place 1 ½ cups of all-purpose flour and 2 ½ cups of Japanese breadcrumbs on two separate plates.
Whisk 3-4 eggs in a small bowl until completely combined.
Season the all-purpose flour with ½ tsp salt and 1/3 tsp pepper.
Coat each roll in the seasoned flour. dip into the egg mixture and then coat with the Japanese breadcrumbs.
Repeat step 12 until you have coated all of the 8 rolls.
In a nonstick frying pan over medium heat, pour cooking oil until it is ½ deep.
Once oil has heated up, fry the rolls for 3-4 minutes until golden brown Slice each roll diagonally into half-inch slices.
Serve with dip of your choice.
